Jammin Jays Zucchini Patties
4 cups shredded zucchini
1 cup shredded cheddar cheese
3/4 cup biscuit/baking mix
1 Pack of Jammin Jays Dip(I used cheesy garlic
4 large eggs, room temperature, lightly beaten
4 tablespoons butter
Directions
1. In a bowl, combine first 5 ingredients. Stir in eggs; mix well. Shape into twelve patties, using about 1/4 cup of zucchini mixture for each patty.
2. In a skillet over medium-high heat, melt butter; cook patties until lightly browned, 4-5 minutes on each side.
