INGREDIENTS
CHICKEN
6 skinless boneless chicken breasts
4 eggs
2 cup seasoned Panko
1 cup parmesan cheese, finely grated
1 cup of cheddar cheese (I used sharp)
1 Pack of Jammin Jays Dip (original, Cheesy Garlic, Jalapeno)
CREAM CHEESE MIXTURE
16ounces
1/2 cup bacon, cooked and crumbled
1 cup mozzarella cheese, shredded
INSTRUCTIONS
Preheat oven to 375°F.
Butterfly each chicken breast. To butterfly, slice into the thick side of the breast and cut towards the thin point, being careful not to cut all the way through to the other side. You should be able to open the chicken breast (resembling the shape of a butterfly).
In a small bowl, whisk eggs.
In a second bowl, combine your breadcrumbs,
In a third small bowl mix together the cream cheese mixture including cream cheese, Jammin Jays Dip Mix, crumbled bacon, parmesan cheese and shredded mozzarella. (You can also add onion, mushrooms and peppers)
Divide the cream cheese mixture into your 6 chicken breasts, spreading out to cover, and fold the breast closed.
Roll each breast carefully in the egg mixture and then roll in your Panko mixture.
Place on baking sheet and bake in the oven for 30-45 minutes (time will vary based on the size of chicken breast).
Just before chicken is done place Chedder cheese on top to melt
